Ingredients

- 1 cup (125g) all-purpose flour
- 1 tablespoon sugar (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup (180ml) milk (or dairy-free alternative)
- 1 egg

Directions
- 1.In a large mixing bowl mash the banana until smooth.
- 2.Add the egg and milk and vanilla extract and melted butter. Whisk until combined.
- 3.In a separate bowl

- 10.In a separate bowl mix the flour and sugar and baking powder and baking soda and salt and cinnamon.
- 11.Gradually add the dry ingredients to the wet ingredients and make sure to stir gently. Do not overmix; a few lumps are fine.
- 12.Heat a non-stick pan or griddle over medium heat and lightly grease with butter or oil.
- 13.Pour 1/4 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface (about 2 minutes) then flip and cook for another 1-2 minutes until golden brown.
- 14.Repeat with the remaining batter.
- 15.Serve warm with syrup or fresh fruit. Enjoy!
